  1. Peel the raw beets and grate them into a medium bowl using a medium-hole/course grater so that the grated beets are not grated too finely because it will clump. Set aside. Peel the tomatoes and slice them into small wedges. Add the tomatoes to the grated beets. Squeeze the lime juice into the beet-tomato mixture and toss in the pinches of salt. (The lime juice and salt should be to taste). This slaw can be served immediately or chilled in the refrigerator to serve later. This is a great substitute for coleslaw.
