Quinoa Salad

Ingredients:

  • quinoa 16 oz.
  • 1 bunch scallion
  • 1 small box of sugar plum tomatoes
  • 1 cup of shelled edamame
  • 1/4 cup of olive oil
  • salt and pepper to taste

Directions:

  1. Place 1 cup quinoa and 2 cups of water in a saucepan bring to boil. reduce to simmer,cover and cook until water is absorbed, for about 10 to 15 minutes. when done grain appear translucent, and the germ ring will be visible along the outside edge of the grain.
  2. Let quinoa cool down for about an hour at room temp.
  3. Slice scallion bunch. and cut tomatoes in halves.
  4. Add edamame, tomatoes, scallions and olive oil, salt & pepper all in bowl and mix.
  5. You can serve chilled or at room temp.
  6. Save extras makes great leftover salad for next day lunch by adding chicken strips to it.
  7. One of my favorite meals hope you try it and enjoy it as much as me :)
