Quick Wasabi Cucumber Pickles

Ingredients:

Directions:

  1. Toss the cucumbers with the salt and leave them to drain in a colander for 15 min.
  2. Mix the wasabi with 1/2 tsp of water to form a paste; leave to stand for a few minutes
  3. Drain cucumbers and pat them dry.
  4. Add vinegar, sugar and soy to the wasabi paste and whisk to combine. Add cucumbers and toss to mix. Serve immediately or chill in the fridge.
