Pumpkin Roll With Cream Cheese Filling

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 3/4 cup flour
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 4 tbsp soft butter
  • 1 tsp vanilla
  • 1 cup chopped walnuts or 1 cup pecans

Directions:

  1. Beat eggs.
  2. Gradually add sugar.
  3. Stir in lemon juice and pumpkin.
  4. Fold in remaining ingredients.
  5. Bake in well greased/floured jelly-roll pan 12-15 minutes at 375.
  6. Remove and roll in powdered sugar dish towel.
  7. Cool.
  8. For filling:.
  9. Combine all ingredients.
  10. Unroll the cooled roll and frost with filling.
  11. Reroll (without dishtowel) and place on serving plate.
