Pumpkin Oatmeal Raisin Cookies

Ingredients:

  • 2 cups flour
  • 1 1/3 cups quick oats
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 egg
  • 3/4 cup walnuts (optional)
  • 3/4 cup raisins

Directions:

  1. Preheat oven to 350°F; lightly grease cookie sheet.
  2. Combine flour, oats, baking soda, cinnamon, and salt in medium bowl. Beat butter, brown sugar, and granulated sugar in a large bowl until light and fluffy. Add pumpkin, egg, and vanilla mix well. Add flour and mix well. Stir in nuts and raisins.
  3. Drop by tablespoon fulls.
  4. Bake 14-16 minutes. Let cool 2 minutes before removing from pan.
