Ingredients:

  • 1 cup solid- pack pumpkin
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cups sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tbsp sugar

Directions:

  1. Preheat oven to 350 degrees
  2. Whisk together Flour and baking powter in a small bowl.
  3. Whisk pumpkin,oil,eggs,pumpkin spice,sugar,baking sode and salt until smooth. Use a large bowl
  4. Add flour mixture gradually to wet mixture.
  5. Divide batter evenly in 12 muffin cups.Sprinkle with sugar.
  6. Bake 25 to 30 minutes, then let cool.
