Pumpkin Chocolate Chip Cookies (Taste of Home 1995)

Ingredients:

  • 1 cup butter
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 egg
  • 2 cups flour
  • 1 cup oats
  • 1 tsp cinnamon
  • 1 cup pumpkin
  • 1/2 cups chocolate chips

Directions:

  1. In mixing bowl, cream butter & sugars. Beat in egg & vanilla. Add pumpkin slowly during mixing. Combine flour, oats, bkg soda & cinnamon and add to sugar/egg mixture. Fold in chocolate chips. Drop by tablespoonful onto greased baking sheets (I used stonewear because I won't making cookies on anything else anymore...huge difference). Bake at 350 for 12-13 minutes (I found 15 minutes was the best or they just don't set up). They need to be pretty firm when you take them out.
