These cookies are made from canned pumpkin, real butter and chocolate chips. I'm sure the recipe can be modified to be a less calories/less fat variety but I wanted to see how they rated the way they were in the book. Very easy to make.
Ingredients:
1 cup butter
3/4 cup brown sugar
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups flour
1 cup oats
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup pumpkin
1/2 cups chocolate chips
Directions:
1. In mixing bowl, cream butter & sugars. Beat in egg & vanilla. Add pumpkin slowly during mixing. Combine flour, oats, bkg soda & cinnamon and add to sugar/egg mixture. Fold in chocolate chips. Drop by tablespoonful onto greased baking sheets (I used stonewear because I won't making cookies on anything else anymore...huge difference). Bake at 350 for 12-13 minutes (I found 15 minutes was the best or they just don't set up). They need to be pretty firm when you take them out.
