Ingredients:

  • 1 cup oil
  • 4 eggs
  • 1 15 oz can pumpkin
  • 1/2 cup of coconut milk
  • 1 tbsp ginger
  • 1/2 tbsp nutmeg
  • 1 tsp ground cloves
  • 11/2 tbsp cinnamon
  • 1 tsp salt
  • 31/2 cups flour

Directions:

  1. Combine Oil, eggs, pumpkin and Coconut Milk
  2. Mix Well
  3. Add Spices, Salt, Baking Soda, Baking Powder, Flour, and Sugars.
  4. Mix for 7 min.
  5. Bake at 350' in greased and floured bread pans for 50 to 60 min. Or until knife comes out clean and bread springs back to touch.
