Ingredients:

  • 1 3/4 cup flour
  • 1/4 cup sugar
  • 3/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 2/3 cup milk
  • 1/4 cup oil

Directions:

  1. Preheat oven to 425 degrees.
  2. In a large bowl, combine flour, sugar, baking powder, nutmeg and salt.
  3. In a small bowl, mix pumpkin, milk, oil and egg until well blended.
  4. Stir pumpkin mixture into flour mixture until blended.
  5. Fold in bacon crumbles.
  6. Spoon batter into greased mini muffin pans, 2/3 full.
  7. Bake for 16-20 minutes or until tester comes out clean.
  8. Remove muffins from pans and cool on wire rack.
  9. Makes 24 mini muffins.
