Ingredients:

Directions:

  1. Preheat the grill. Season each scallop with olive oil and Essence. Grill each scallop for 2 to 3 minutes on each side. Remove from the grill and allow to cool. Wrap the sides of each scallop with the prosciutto.
  2. Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
  3. Combine all ingredients thoroughly. Yield: 2/3 cup
