Ingredients:

Directions:

  1. Heat oven to 200 degrees Celsius Butter an oven proof dish about 20 x 30cm in size.
  2. Cut the potatoes into matchstick size about 1/2 -1cm thick.
  3. In a bowl, toss the potatoes with the very thinly sliced onions, add the cream, the dissolved stock cube, thyme, salt and pepper to taste. Place in the buttered ovenproof dish.
  4. Sprinkle some extra thyme, and coarsely ground pepper on top and bake for about 45 minutes, until the potatoes are soft and the top is crisp.
  5. ** Place under a hot grill to crisp up and brown if they are still pale on top.
