Ingredients:

  • 2 lb small potato either red (perferred) or white
  • 3/4 to 1 cup mayo
  • 1/4 to 1/3 cup sour cream
  • 2 tsp dried dill
  • 1 tsp paprika
  • pinch of cayene pepper
  • 1/2 tsp salt
  • pinch of pepper

Directions:

  1. Cut potatoes into quarters and cook till fork tender. (i like to steam my potatoes when making a salad with them
  2. While potatoes are cooking mix everything except the eggs in a large boil.
  3. Add 5 of the eggs diced into the mix.
  4. Chill in the fridge.
  5. Allow cooked potatoes to cool slightly then add to chilled mix
  6. Slice last 2 eggs and fan on top.
  7. Put in fridge overnight.
