Potato-Onion Flat Pie

Ingredients:

Directions:

  1. Preheat oven to 400°F.
  2. In large saute pan, heat butter and oil together and saute onion until tender.
  3. Add the potatoes and cook 10 minutes until transparent and the onions are browned.
  4. Place pie crust on a lightly greased cookie sheet.
  5. Spread filling over crust, leaving a 3/4 inch border.
  6. Fold border over filling and brush border with half-and-half.
  7. Bake in preheated oven 15 minutes.
  8. Mix remaining half-and-half with the salt and pepper and pour over filling.
  9. Bake 10 more minutes, or until pastry & filling is set and golden.
  10. To serve, cut into wedges.
