Potato & Cheese Latkes With Apple-Pear Sauce

Ingredients:

  • 2/3 lb of farmer's cheese
  • 2 eggs
  • 2 1/2 tbsp matzo meal or 2 1/2 tbsp flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt (eliminate if using feta cheese) or 1/4 tsp tamari (eliminate if using feta cheese)
  • 1/2 tsp. white pepper
  • 1 tsp garlic
  • 8 medium apples
  • 5 medium pears
  • 3 tsp lemon rind
  • 1 tsp cinnamon (or to taste)

Directions:

  1. LATKES:.
  2. Peel, cube, and boil potatoes.
  3. Mash & add cheese.
  4. Beat eggs well and add.matzoh meal or flour, baking powder, and spices.
  5. Heat oil until hot and put large spoonful for each pancake.
  6. Cook until brown and flip.
  7. *VARIATION: Use one potato and 10 oz. package of spinach (frozen or cooked), well drained and chopped. This is especially tasty if you're using feta.
  8. APPLE-PEAR SAUCE: (Pareve).
  9. Core and cut apples and pears.
  10. Cover well with water and cook until soft.
  11. Stir occasionally to prevent sticking.
  12. Put through foley food mill (I see them often in second hand stores) or force through colander to remove skins and seeds.
  13. Mix in lemon rind and cinnamon.
  14. Enjoy!
