Potato Broccoli Salad

Ingredients:

  • 4 cups cold,cooked, broccoli pieces (cool after microwaving)
  • 1/4 cup chopped onion
  • 2 cups cold, cooked potatoes , cut into cubes
  • 1/3 cup olive oil
  • 1/3 cup white vinegar
  • 1/2 tsp pepper
  • 1/3 cup finely grated parmesan cheese
  • 2 or 3 slices crisply cooked bacon, crumbled

Directions:

  1. Toss the potatoes, broccoli, onion, olives until well mixed
  2. Mix the oil, vinegar, garlic, pepper, Parmesan cheese with a whisk and pour over the vegetables
  3. Toss vegetables and add crumbled bacon to the mix.
  4. Regrigerate for an hour before serving for flavors to blend
