Potato and Spinach Dumplings

Ingredients:

Directions:

  1. Defrost and drain spinach.
  2. Peel and boil potatoes, drain and mash.
  3. Add spinach, lightly beaten egg whites and sifted flour to potato.
  4. Mix well and allow mixture to become cold.
  5. With floured hands take tablespoons of mixture and roll into balls.
  6. Drop a quarter of the balls into large pan of simmering water.
  7. When they rise to the top of the water simmer for 3 minutes.
  8. Remove from the water with a slotted spoon.
  9. Place on kitchen paper.
  10. Repeat with remaining spinach balls in batches.
  11. Serve with a vegetarian spaghetti sauce.
