Portuguese Gratin of Shrimp and Spinach

Ingredients:

Directions:

  1. Cook shrimp in olive oil until just done; put in a bowl.
  2. Add spinach to pan; cook down; put in a metal bowl; cool.
  3. Add onion to pan with garlic and ham; saute.
  4. Add port; remove and add to shrimp.
  5. Add butter to pan; melt; add flour to milk; pour in; cook until thick.
  6. Meanwhile put another metal pan over spinach and crush out all water.
  7. Add to shrimp.
  8. In Pam sprayed baking pan, mix sauce with spinach mixture; season with salt and white pepper; top with cheese.
  9. Bake 30 minutes at 350 degrees Fahrenheit.
