Ingredients:

Directions:

  1. Cook pasta according to package directions, drain and cover to keep warm.
  2. While pasta is cooking in a bowl combine 1 tablespoon of the oil, 2 tablespoons of the lime juice and the spices (cumin - garlic powder). Add pork and toss to coat.
  3. Heat the remaining oil in a skillet over medium high heat. Add pork mixture and cook about 5-10 minutes or until pork is browned.
  4. Add next 5 ingredients (peppers - chilies), cook, stirring for 3-5 minutes or until vegetables are tender.
  5. Stir in zucchini and the rest of the lime juice (4 T), cover and cook for 2-5 minutes longer.
  6. Stir in pasta and stir to combine.
