Ingredients:

  • 1 lb pork loin (in 8 slices)
  • 2 tbsp flour
  • 1 tbsp oil
  • 1 tsp cornstarch
  • 1/2 cup chicken broth
  • 3 tbsp lemon juice
  • 1/2 tsp salt

Directions:

  1. Dredge pork in flour. Heat oil in a large nonstick skillet.
  2. Add pork and cook until browned on both sides. Remove.
  3. Stir together the cornstarch, chicken broth, lemon juice, and parsley. Simmer 1 minute. Spoon over pork.
