Ingredients:

Directions:

  1. Slice the pork tenderloin and place in a serving bowl
  2. Add the apricots, red pepper, and onion
  3. Add the almonds
  4. In a small bowl, mix the curry powder, lime zest, lime juice
  5. Add the chili powder to your preferred taste
  6. Stir in the plain yogurt
  7. Pour the yogurt dressing over the mixture, and toss to mix
  8. Season with salt and pepper
  9. Stir in the chopped mint
  10. Cover and refrigerate for at least 1 hour before serving
