  1. Make syrup1 first:
  2. Mix sugar and water in a heavy saucepan over low heat. Stir until sugar dissolves. Increase heat and simmer for 5 to 7 minutes. Let cool
  3. Syrup2:
  4. Repeat same process with syrup 1 and mix both kinds of syrup together.
  5. Batter:
  6. Cream butter and sugar together until light and fluffy. Add eggs, one at time. In a separate bowl, mix together coconut, flour, semolina and baking powder. Add dry ingredients to egg mixture and fold until combined. Chill in refrigerator for two hours. Use a teaspoon to form dough into small balls and roll in coconut or ground pistachios. Transfer to prepared pans and bake for 25 minutes until golden in color. Pour cooled syrup over cookies and leave for 10 minutes. Take them out of pan and let set. Arrange in serving platter and serve.
