Ingredients:

Directions:

  1. In a skillet, heat oil and sauté onions. If desired, add garlic for the final minute of cooking. Let cool.
  2. In a food processor, combine beets, onions, garlic (if using), yogurt, mayonnaise and lemon juice till coarse.
  3. Season to taste with salt and pepper. Garnish.
  4. Serve with crudités, crackers, bread sticks or wedges of pita bread.
