Ingredients:

Directions:

  1. Spoon mixture into an 8-inch square pan.
  2. Place in freezer for approximately 3 hours or until slightly firm.
  3. (To make this dish ahead of time, freeze the pineapple mixture solid and then remove from freezer 20 miuntes before serving to allow it to soften.)
  4. Serve garnished with:
  5. Slices of kiwi and sprigs of fresh mint

  9. This sounds great. I learned from experience that if you wait to cut the pineapple until 2 or 3 rows of leaves are dried at the base, it will be as sweet as candy when you cut it open. Mmmm!
