Pineapple Ginger Sauced Tropical Fruit

Ingredients:

Directions:

  1. Skin pineapple and dice reserving 1/4 of the fruit then process in food processor until smooth.
  2. Strain into a pan then add vanilla bean, sugar and fresh ginger.
  3. Cook over medium heat until thickened about 8 minutes then remove pineapple sauce from heat.
  4. Scrape seeds from vanilla bean and stir seeds into sauce and discard pod.
  5. Combine warm sauce with remaining pineapple and spoon over tropical fruit.
  6. Sprinkle with crystallized ginger.
