Pineapple Curry With Prawns

Ingredients:

  • 2 tbsp. kaeng khua chilli paste
  • 3 cups coconut milk
  • 2 kaffir lime leaves torn into pieces
  • 2 tbsp. sugar
  • 2 tbsp. tamarind or lime juice
  • 2 tbsp. fish sauce

Directions:

  1. Skim 3 tbsp. of cream from the coconut milk, heat in a wok. When the oil surfaces, add the pounded chilli paste and stir-fry. When the fragant, put in the prawns and pineapple and coconut milk and stir.
  2. Season with the tamarind or lime juice, sugar and fish sauce, add the kaffir lime leaves, and when the curry is boiling once again, remove from the heat.
