Pineapple Cashew Chicken Stir Fry

Ingredients:

Directions:

  1. Reserve the juice from the cans of pineapples. Mix with soy sauce, corn starch, sugar, and white vinegar. Heat 2 tablespoons oil in large skillet over high heat. Add chicken, cashews, and garlic. Stir fry for 1 minute. Remove. Heat remaining oil in same pan. Add onion and carrots. Stir fry for 3 minutes. Add chicken, cashews, garlic and stir fry sauce. Stir to coat all ingredients, and stir fry for 2 minutes. Add pineapple tidbits and snow peas and stir fry for 1 minute. Remove from heat. Serve over rice or noodles.
