Pineapple Carrot Cookies

  1. Preheat oven 375 degrees.
  2. In large bowl, beat butter and sugars until light and fluffy.
  3. Beat in egg and vanilla.
  4. Beat in drained pineapple, carrots and pecans.
  5. In medium bowl, combine remaining ingred.
  6. Beat into pineapple mixture until blended.
  7. Drop heaping tablespoons of batter 2 in apart onto greased cookie sheets.
  8. Bake 15-20 minutes or until golden.
  9. Leave on cookie rack for 2 minutes and then place on cool surface.
  10. They are great with milk.
