Pilaf-Style Basmati Rice

Ingredients:

  • 1 tbsp canola oil
  • 3 inches piece cinnamon sticks, halved
  • 2 whole cloves
  • 1/4 cup thinly sliced onion
  • 1 tsp table salt
  • 1 1/2 cups water

Directions:

  1. Heat oil in a medium saucepan until almost smoking. Add whole spices and cook until they pop. Add onions and cook until translucent, stirring frequently, about 2 minutes. Add rice and stir about 1 minute, until a nutty smell develops.
  2. Add salt and water. Bring to a boil, reduce heat to a simmer, cover tightly and cook until water has all been absorbed, about 17 minutes. Let stand, covered, another 10 minutes. Fluff with fork and serve.
