Ingredients:

  • okay now you need 5 oz of suet
  • 1 lb dried venison or beef- jerky --whatever you choose, (go easy on the greasy or overly salty styles of commercially processed)
  • 2 tbsp brown sugar

Directions:

  1. First you’re going to need to make some suet
  2. Grind, chop or dice beef fat. Only clean white fat,
  3. Heat the fat over a low- slow flame until it’s liquefied.
  4. Strain it by pouring -while still very warm- through fine cheesecloth.
  5. Let it cool and harden.
  6. Cool it and cool it slowly in flat wide low glass pans
  7. Repeat steps 2-3.
  8. -Needs to be Rendered twice or the suet will not cake properly.
  9. Let it cool again slowly-to harden- and store covered in the freezer.
  10. Chop dice or grind the jerky
  11. Mix jerky with sugar, raisins, and cranberries
  12. In a meatloaf pan- cover with the warm suet
  13. Let harden in fridge.
  14. You can make suet trays, form suet balls, just make serving sizes you like
  15. Notes
  16. Suet- is very high energy food
  17. Suet -is not to be confused with cooked meat drippings
  18. Suet …you can add to it….dried shaved nuts also.
