Pecan Chicken With Honey Mustard Sauce

Ingredients:

Directions:

  1. Using the first 3 tablespoons of ground mustard, lightly coat both sides of each chicken breast.
  2. Combine pecans and red pepper in a small, shallow bowl and gently coat each chicken breast with the pecan mixture.
  3. Heat butter and oil in a large skillet until hot.
  4. Add the chicken and cook over medium-high heat for 2 minutes on each side or until just lightly browned.
  5. Remove the chicken from the oil and place it in an 11 X 17 baking dish.
  6. Bake, uncovered, at 375 degrees for 15-20 minutes until chicken is done.
  7. Heat the whipping cream in a large skilled over medium heat until it is reduced by half (about 12 minutes).
  8. Stir in the honey, 2 tablespoons mustard and salt.
  9. Ladle sauce over each chicken breast immediately before serving.
