Peanut Butter Surprise Chocolate Cookies

Ingredients:

Directions:

  1. In a large bowl, cream butter, sugars, and 1/4 c peanut butter.
  2. Add egg and vanilla; mix well.
  3. Combine flour, cocoa,and baking soda;add to creamed mixture and mix well.
  4. Blend powder sugar with remaining peanut butter until smooth.Roll into 24 balls; 1 each.
  5. Divide cookie dough into 24 pieces;flatten each into a 3 circle.
  6. Place one peanut butter ball on each circle; bring edges over to completely cover it.(Dough may crack; reshape cookie as needed.).
  7. Place cookies seam side down on ungreased baking sheets.
  8. Flatten each cookie slightly with the bottom of a glass dipped in sugar.
  9. Bake at 375 degrees for 7-9 minutes or until set.
  10. NOTE:Between baking times, I kept the dough in the fridge so that it wouldn't get all sticky when I had to roll it into balls.
