  1. Preheat the oven to 350°F Line 2 baking sheets with parchment paper.
  2. In a large mixing bowl, cream the butter with the sugar. Beat in the peanut butter, egg and vanilla.
  3. Sift together the flour and baking soda. Add to the cookie dough and mix well.
  4. Roll the dough into golf ball-sized balls. Place them about 2-inches apart on the prepared baking sheets. Place another sheet of parchment paper on top and press lightly to flatten the cookies. Remove the top sheet of parchment paper.
  5. Bake the cookies for 10-15 minutes, or until the edges begin to brown. Carefully remove and let cool on a wire rack.
