Chocolate Flake Cookies

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups rolled oats
  • 2 cups frosted flakes (whole flakes, not crushed)

Directions:

  1. Preheat oven to 175 C (350 F).
  2. Line cookie sheets with parchment paper.
  3. Cream together butter, sugar and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Add vanilla, stir to combine.
  6. Mix together flour, baking soda, baking powder and salt; add to the butter mixture and stir to combine.
  7. Add oatmeal, frosted flakes and chocolate chips and mix (dough will be stiff).
  8. Shape dough into 1-inch balls and place on the lined cookie sheets.
  9. Bake in the preheated oven for about 10 minutes until golden.
