Ingredients:

  • 1 cup flour
  • 2 tsp plus 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg separated
  • 1 1/4 cup fruity wine or water
  • 1/4 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 cup buttermilk or as needed
  • 1 cup fresh blacberries or blueberries

Directions:

  1. Sift flour, baking powder, soda, salt and 2 tsp sugar
  2. Mix together egg yolk, buttermilk and melted butter
  3. Combine both mixtures, adding more buttermilk if mixture is dry.
  4. Beat white to soft peaks and blend into mixture.
  5. In a dutch over with cover, combine wine, 3/4 cup sugar and spice and bring to a boil
  6. Add peaches and berries and simmer only 3 minutes.
  7. Do not overcook.
  8. Drop on dumpling batter by spoonfuls.
  9. Cover and simmer 8 to 10 minutes or until dumplings are firm.
  10. Serve with whipped cream.
  11. Best served when freshly made or up to one hour
