Ingredients:

  • 1/ 2 cup diced yellow bell pepper - any color will do
  • 1 / 2 cup diced red onion
  • 3 or 4 diced jalapenos - i used 6 = )
  • 1 / 2 cup chopped cilantro
  • 3 tblsp lime juice
  • 3 tblsp orange marmalade - any preserve would do.

Directions:

  1. Combine all vegetables in a glass bowl and gently mix. Put the marmalade in small glass bowl, heat in microwave till the preserves melt - about 10-15 seconds, add the lime juice and mix well. Drizzle this over the salsa. Mix gently and serve with corn chips.
