Pasta With Chicken and Spicy Peas

Ingredients:

Directions:

  1. Heat the oil in a large pan.
  2. Cut the chicken into bite-sized pieces and cook about 4-5 minutes until juices run clear. Remove from pan with a slotted spoon and set aside in a bowl covered with foil to keep warm.
  3. Add more oil to the same pan if necessary and add the shallots and cook for about 8 minutes, until softened and lightly coloured.
  4. Add the cumin and garlic and cook for a further 2 minutes.
  5. Stir in the cherry tomatoes and cook for 5 minutes, until softened.
  6. Add the Tabasco sauce, peas, lemon zest and juice. Season and cook for 2-3 minutes.
  7. Meanwhile, cook the pasta according to the packet instructions and drain.
  8. Return the chicken and any juices that have accumulated at the bottom of the bowl to the pan. Add the pasta and stir until well combined.
  9. Stir in the chopped parsley and serve.
