Parsleyed New Potatoes

Ingredients:

  • 3 lb small new potatoes
  • 1/3 cup butter
  • 1 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Bring potatoes and water to cover to a boil in a Dutch oven over medium heat, and cook 20 minutes or until tender. Drain and return to Dutch oven.
  2. Microwave butter in a microwave-safe glass bowl at HIGH 45 seconds or until melted. Stir in parsley, salt, and pepper. Pour over potatoes, gently tossing to coat. Serve immediately.
