Parmesan Wafers With Prosciutto and Figs

Ingredients:

  • 8 slices prosciutto

Directions:

  1. Heat the oven to 180°C Lay an egg ring on a non-stick tray. Sprinkle an even layer of grated parmesan inside the ring. Remove the ring and use it to make a second wafer next to the first. Use these first two wafers as your guinea pigs, because you may have to adjust the heat of your oven to suit the rest.
  2. Bake 3 – 5 minutes, watching carefully until the cheese has melted into a soft wafer shape. Remove from the oven while still bubbling, and leave for 1 minute. Carefully lift off the wafers and lay them on a wire rack to cool and harden. Adjust the oven temperature if necessary and continue the process until you have 8 wafers.
  3. To serve, cut the figs into quarters. Lay 2 slices of prosciutto on top of a parmesan wafer on each plat. Top with 2 fig quarters and a final parmesan wafer and serve.
