Ingredients:

  • 4 or 5 large eggs
  • 4 tbsp flour
  • 4 tbsp sugar
  • 2 cups milk
  • 2 tsp vanilla
  • 1 tbsp rum or cognac

Directions:

  1. Preheat oven to 400 degrees F..
  2. Grease and flour a 9 deep dish pie plate.
  3. Beat together eggs, flour and sugar.
  4. Add milk and vanilla slowly to the egg mixture.
  5. Arrange fruit on bottom of prepared pan.
  6. Pour batter over the fruit.
  7. Drizzle rum or cognac over the batter.
  8. Bake for 30 to 40 minutes.
  9. Strew dots of unsalted butter over clafouti halfway through baking if desired.
