Ingredients:

  • 1 egg
  • 1 cup buttermilk
  • 2 tbsp oil
  • 1 cup flour
  • 1 tbsp sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Blend all ingredients.
  2. Brush griddle lightly with oil and heat.
  3. Drop by spoonfuls onto hot griddle.
  4. When the pancake bubbles, flip it over.
  5. Cook the other side until lightly browned.
