Oven Mushroom Stew

Ingredients:

  • 1 1/2-2 lbs stew meat
  • 2 tbsp oil
  • 1 large onion
  • 1 (2 oz) package onion soup mix
  • 2 (10 oz) cans mushroom soup
  • 2 tsp ketchup

Directions:

  1. Cut stew meat and onion into 1 cubes.
  2. Brown the beef in the hot oil and add the onions half way through cooking.
  3. Stir in the soup and two soup cans of water.
  4. Cut the carrots into 1 1/2 pieces.
  5. Peel and quarter the potatoes.
  6. Stir all remaining ingredients into the beef, stirring well before you add the carrots and potatoes.
  7. Bring to a boil.
  8. Cover and place in a 325F oven for 3 hours.
  9. Stir once per hour and add more hot water if the gravy gets too thick.
  10. I sometimes substitute Lazy Meatballs for the meat.
