Oven Baked Omelet With Sausage And Peppers

Ingredients:

Directions:

  1. In large saucepan combine sausage and garlic with cold water to cover by 1 .
  2. Cover then bring to a boil over high heat.
  3. Reduce heat to low and simmer 25 minutes.
  4. Drain sausage and cut into slices and return to clean saucepan.
  5. Add 4 garlic cloves and red wine.
  6. Bring to boil over high heat then reduce heat and cover partially and cook 45 minutes.
  7. Remove from heat.
  8. In large sauté pan over medium high heat warm the olive oil.
  9. Add leek and sauté until beginning to soften about 5 minutes.
  10. Stir in bell peppers and continue to sauté 10 minutes longer.
  11. Add oregano and season with salt and pepper then add sausage then stir to mix well.
  12. Preheat oven to 400.
  13. Place butter in baking dish then put dish in oven for 5 minutes.
  14. In bowl using electric mixer beat together the egg whites and salt until stiff peaks form.
  15. In another bowl beat egg yolks until thick.
  16. Add flour, cream, cayenne and black pepper to yolks and mix.
  17. Gently fold in whites.
  18. Remove dish from oven.
  19. Pour half the egg mixture into the hot dish.
  20. Scatter with sausage and remaining egg mixture.
  21. Sprinkle with cheese then return to oven and bake 5 minutes.
  22. Reduce heat to 350 and bake 15 minutes longer then cut omelet into wedges and serve.
