Orange, Bocconcini and Beetroot Salad

Ingredients:

  • 1 small orange
  • 1/3 cup beetroot , wedges from can
  • 1 pinch salt
  • 1 pinch pepper

Directions:

  1. Peel orange and slice into segments.
  2. Wash lettuce and drain.
  3. Place lettuce on plate and layer oranges on top.
  4. Tear bocconci balls and apply evenly to plate.
  5. Season with salt, pepper and vinegar.
