Ingredients:

Directions:

  1. Heat the oil in a very large saucepan, fry onions until soft, then add the garlic and the pumpkin and cook for about 2 minutes, stirring well.
  2. Now add the boiling vegetable stock, the orange rind and juice and dried tyme and simmer, covered, for 20 minutes or until pumpkin is tender.
  3. Blend the soup until smooth and then return to the saucepan and season to taste with salt and pepper add the milk and reheat the soup for about 3-4 minutes, or until soup is piping hot but not boiling.
  4. Then serve immediately with crusty bread
