Onion Bhajis With Cucumber Raita Dip

Ingredients:

Directions:

  1. Break the egg into a bowl, add the lemon juice and water and lightly whisk
  2. In another bowl, sieve the flour and spices together, then stir in salt,
  3. Make a well in the middle of the flour mix, pour in the egg mixture,
  4. Using a fork, gradually mix together to form a thick batter, leave to stand for 10-15 minutes
  5. Heat the oil in a deep fryer until it reaches 170c/ 325f
  6. Stir the onions into the batter, ( i prefer to leave the onions mixed in the batter over night in the fridge)
  7. Lower a rounded tablespoon of the mixture carefully into the hot oil and cook for approx 4 minutes, turning the bhajis frequently with a slotted metal spoon
  8. Remove from the oil and drain on kitchen paper,
  9. Meanwhile
  10. Place all the raita ingredients into a bowl,mix to combine
  11. Serve the bhajis with a wedge of lemon and the raita dip
