Ingredients:

Directions:

  1. In a 10 cast iron skillet,heat oil over medium heat.
  2. Add minced garlic. Saute until garlic turns light brown.
  3. Add tomatoes and red pepper flakes. Stir.
  4. Add okra and sugar. Stir gently until well combined. Mixture will be slimy but will lose most of its sliminess as it cooks.
  5. Season with salt and pepper to taste.
  6. Bring mixture to a boil then reduce to medium low heat and simmer for 20-25 minutes.
  7. Add additional salt and pepper if needed.
  8. Serve hot.
  9. Traditional southern method:
  10. Omit oil and fry 2 slices of thick-cut bacon or salt pork until crisp.
  11. Cut pork into pieces and return to skillet. Do not drain grease.
  12. Prepare okra and tomatoes as directed.
