Ingredients:

  • 1/2 cup almonds
  • 2 tsp cinnamon
  • 2 eggs
  • 1 cup flour
  • 1/2 cup oatmeal
  • 1/2 tsp salt , baking powder (each)
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 cup vegetable oil

Directions:

  1. Preheat oven to 325 degrees.
  2. Sift together flour, oatmeal, salt, baking powder & cinnamon. Beat eggs, oil, sugar & vanilla together in a separate bowl. Add sifted ingredients to creamed mixture, then add zucchini & almonds. Mix well!
  3. Pour batter into greased pans & bake for approximately 45 mins.
