Oatmeal Wheat Bread

  1. Mix yeast, water and honey, let sit 10 minutes until foamy.
  2. Add to wheat flour, 1 cup bread flour, both oats, salt, gluten and oil and mix.
  3. Add the additional cup of bread flour until it pulls away from the sides of the bowl.
  4. Use a dough hook or your hands and knead for about 10 minutes until smooth and elastic.
  5. Put in a greased bowl and rise covered 1 hour or more until doubled in size, punch down, divide into 2 and rolls into loaves.
  6. Put in greased loaf pans and rise again until doubled, 45 minutes or so.
  7. Bake in preheated oven 350 degrees for about 30 minutes until golden and sound hollow when the bottom is tapped.
  8. Cool on racks.
