Oatmeal Gingerbread from the Isle of Man

Ingredients:

  • 1 lb flour (4cups)
  • 1/4 lb oatmeal (1 cup)
  • 2 oz margarine (4 tbsp.)
  • 2 oz brown sugar (4 tbsp.)
  • 3/4 tsp baking soda
  • 1 tbsp syrup
  • 1 tbsp treacle ( molasses)
  • 1 egg

Directions:

  1. Preheat oven to 350 degrees F.
  2. Rub margarine into flour and add the other dry ingredients.
  3. Pour in melted syrup and treacle.
  4. Beat in egg and enough buttermilk to make a soft dropping consistency.
  5. Turn into a greased, 8 round, tin and bake in a moderate oven for one to one and a half hours.
